vikingsparrow gave me some leftover chicken, so I melted some bacon, toasted some garlic, shallots and onion, deglazed the pan with Patron tequila, put it on tortillas with fresh spinach, shredded chicken and mexican shredded cheese, toasted it in the broiler, folded it over and toasted it again, and voilà! Tequila Chicken Quesadillas.
Nom nom nom. Deglazing with tequila plays GOOD with chicken. It has this savory floral tone that cuts through the heaviness or gamey flavor of chicken.
